Extracting sugar from the excess whey allows researchers to utilize waste for other functions.

Reduction of Dairy Waste in Local Communities through the Extraction of Sugar from Whey

This year, the 2018 UCSC iGEM team partnered with a team of undergraduate students from the Instituto Tecnologico Superior de Guanajuato (ITESG) in Mexico. ITESG approached the UCSC team in early spring to collaborate on a project that would reduce waste in farm communities.
They developed methods for isolating lactose from whey, a dairy waste product. We will use the upcycled dairy waste as a low cost growth media for \textit{Y. lipolytica str. PoPPY}. Because whey can be obtained from any milk-producing animal, it is widely available throughout the world. Using the methods that ITESG developed to isolate lactose, anyone with access to a milk-producing animal can create the growth media for PoPPY.
