When we explained our use of antifreeze proteins for our project, Rob suspects that they likely change lipid membrane composition. These membrane composition changes likely disrupt bacteria membranes, resulting in an antimicrobial effect. Rob mentioned that he would be careful with the level of expression of the antifreeze proteins.
